See PSTricks: http://www.tug.org/PSTricks There are several options for generating these using PSTricks. Of course, PSTricks isn't your only option; it's the one I would use though. Look into the pst-node package. Then you can draw the images yourself. Now, there may be packages (even PSTricks packages) specifically FOR interval graphs. That may be something more appealing to you. I'm not sure, but I think PSTricks would be a good place to start. (of course, use of PSTricks forces you to use latex and then convert the .ps file to a .pdf file; however, there is a PDFTricks that provides a more direct option...
