Previous passwords referring to, for example web site credentials, are stored in the item record history.
You can choose how many previous versions are stored. The number of history items retained is configurable and could be zero. This is not by date - each item will keep the configured number of previous values.
I suggest you make a backup copy of your database file before you try and recover a previous item's password just in case you make a mistake.
The master password used to open the KeePass database is never stored anywhere. If you use a key file it is up to you to back it up. KeePass does not do this for you.

ok then. Sad. I'm trying to open my old 2019yr backup and doesn't remember which master password I was using back then. Seems like I'm out of the luck.

Out of luck but at least you are secure.
If there was a way to "recover" a lost password the tool would be vulnerable and offer poor security.
