Is there a setting or shortcut to show / hide all in-memory protected values like we have Ctrl+H to show / hide passwords?

No there is not.
The KeePassEnhancedEntryView plug-in allows individual display of hidden fields.

Thank you Paul. But mine is a Ubuntu 18.04 OS and that plug-in is not working. I even tried installing current latest version 2.40.
