I was on 2.38 with KeeCloud and KeePassHttp plugins but since the update to 2.40 these plugins are obsolete. Can you please tell me how can I back on 2.38 and freeze the update to 2.40 until these plugin are updated ? I am on Ubuntu 18.04 LTS.

KeePass doesn't auto update, you must have done so.
To revert copy KeePass.exe from the KeePass portable zip file over the top of your existing KeePass.exe.

I assume Ubuntu's package manager updated your installation. Go to your search engine of choice and do a web search for "install old version of package in ubuntu". You'll find better help for how to use Ubuntu, from Ubuntu forums and Q/A sites than from a KeePass user discussion board.
