Is there a way to have the default view set to Show All Entries? Everytime I exit the program and open it I have to click Edit > Show..

"Edit > Show All Entries" is a menu command, not a View that you can select and keep. In order to achieve what you want you may try to select "Show Entries of Subgroups". Then when you select your top-level group you should see all the entries in your DB.
