Because my company use aws cloud provider, we have servers ec2 instances
Please advise where shoud I put our ec2 instance information: Infrastructure or virtualization or somewhere

Either you could add custom classes to truly reflect this, or perhaps you could simply use virtual machines for the virtual servers running on a real or fictional HyperVisor part of an AWS Cloud Farm?

There's some really good documentation by Combodo. And some official examples; but there's a lot more in this repository too on how to accomplish certain things.
It all depends on your needs. If you want to automate it, you probably can leverage Amazon's APIs and iTop's APIs (or create a PHP extension doing the job for you)
