How to remove the fields services and subcategory in the new request from Portal User.

You'd need to create an extension to edit the default datamodel XML to remove those fields.

The XML to edit will be datamodel-produccion.xml and itop-portal.xml ?

No, you can analyze datamodel-production.xml to see what you need to edit'

But you'll need to create your own iYop extension, in which you define the fields to be removed.
