Does anyone know which folder contains the data model for portal users?
I tried searching for it under datamodels/2.x, but I can't seem to find it

Mind to not edit the original files.
If I can give you a hint: I always look at data/datamodel-production.xml instead; as some modules might already have adjusted the datamodel.
