Adam, To remove hplip you could do: sudo apt-get remove hplip which should remove the ubuntu packages. If you still have the hplip source directory in the directory run: sudo make uninstall or run sudo rm -rf /usr/share/hplip HPLIP should then be removed. To re-install use the automatic installer and you shouldn't have any problems. Although you may want to try removing the printer queues from http://localhost:631 and re-adding them with hp-setup.
