No --- but that's OK, since you don't really have to do that.
The terms "y axis" and "z axis" have several implied meanings, but those
meanings are actually quite separate from each other. In a simple 3D
plot (e.g. of an explicit surface, or a data set equivalent to one), 'z'
is often treated as synonymous of 'dependent variable', but that's
purely convention. If you don't want that convention, use parametric
mode for function plots, or study the 'using' option for data.
In other words: the 'z' axis is always vertical in gnuplot --- but you
can change which of your variables becomes gnuplot's "z".
