Hmm... that description doesn't seem to fit the pattern you showed
above. That one's a collection of [x,y,z] triplets in rectangular grid.

Neither. It's called a 2D colormapped graph, a.k.a. "false color
diagram". In gnuplot, you want to look up 'help pm3d' to find out to do
a plot like that. Oh, and you'll have to restructure to actually be
either a matrix of z values, or a threecolumn data file of x,y,z
triplets, that express the rectangular grid structure in a different way
(> help datafile)
