You can't. For multiplots, the general tactics is to start out with a
script file and edit that, testing it via the 'load' command from inside
gnuplot, instead of fiddling with the plot at the gnuplot prompt then
only saving it at the very end.

You would have to use ordinary 'set label' statements for that. Best to
remove them after the first plot to avoid overpainting.
