Matt,
If I am not mistaken you can use "set format x" to set the x-axis. For
example:
set xdata time
set format x "%H"
set timefmt "%H:%M:%S"
Sets x data as time and will display each hour on x-axis from the time
format H:M:S

I get the time plotted along the x-axis but I also the date. Is it
possible to get the time plotted without the date?
