Is it possible to display images like in this link?

It is a geophisical section with topography....so it is not a regular
matrix....so I can't threat the data as an image.
Any way to plot the image starting from a text file x,y,value (with not all
the pairs of a grid listed)?

Else...assuming that I can resample the data on a regular grid:

I found using Octave that I can display the with pixels of a matrix using
"NaN", gnuplot looks not accept that kind of value: is there a simple way to
draw the white backgound?
