Not quite. The commands are 'head' and 'tail', without the '<'. '<'
is just the marker for gnuplot to know that you wanted input from a
command's output, rather than a simple file.
And generally you shouldn't need 'head' or 'tail' --- gnuplot has the
'every' option to the plot command to take care of those.
