You can set a label, instead of setting the title.
Setting the label, you have the possibility to include variables into
your text (see "help label").
Unfortunately (at least in my version of Gnuplot - Ver. 4.0) this
doesn't seem to work for setting the title.
You need to have a placeholder, e.g. %g depending on the type of
variable you use and the way you want it to be displayed.
In your case that could be:
set label 1 "Plot Number %g",n at graph 0.5, graph 0.5
If you need to find out what kind of placeholder you want to use, look
in the internet for an documentation of "printf" in the C-libraries.
In case you want to display more than one variable, this is also
possible:
set label 1 "Plot Number %g ",n, "at Parameter Value %g", parameter at
graph 0.5, graph 0.5
