copy/paste stops working on windows when gnuplot is runnig, tested on several machines (killall gnuplot fixes the issue)

You're the first to ever report this, even though that gnuplot version you have has been around for quite a while --- in particular, it's older than Windows 10 itself.
I see no such problem here, using version 5.0 patchlevel 1.
Given that, I tend to believe this to be caused by something particular to those several machines of yours.
