The SRS style settable via the UI only applies to GetFeature output, it 
does to apply to the capabilities document. Also as Andrea states the 
EPSG:xxxx style is deprecated.

However that I just tried changing the style for gml3 output and it does 
not seem to do anything. Probably a bug, I thought at some point we did 
support this.

Anyways, feel free to open a bug report for that.
