There is some code for running multiple machines. I'm not sure if it can be used for what you want. I just thought I'd mention this in case you didn't know: There's a mini panel that you can bring up during flight by hitting the "s" key (with default bindings). Hitting "s" again returns to the main panel. If you are doing IFR simulation (but still want to see) you could probably modify the mini panel to display the instrument(s) you want. Look at the preferences.xml in the base pacakge for the paths to the panels. And in the Docs/README.xmlpanel.html you'll find a great "howto" on doing this panel work.
