I'm sure this will sound cranky, but myBib for the iPhone exports BibTeX, although you have to be over 12 years old to purchase it. (Apparently there is "Infrequent/Mild Realistic Violence," and other concerns...) On the Ipad, you can pixel double, or reduce your working area to phone-size. iAnnotate provides highlights and annotations, and with a little Applescript (recently discussed over on the Skim-users list) you can convert its annotations in Skim.
