This BACnet stack for Linux looks like it's intended to implement host-side communications to BACnet devices. Would this BACnet stack be suitable to implement device-side communications in an embedded Linux device? If not, is there any source code available to implement device-side BACnet in an embedded Linux device?

Yes, the BACnet4Linux is currently a client application. I created another sourceforge project for an embedded BACnet stack with embedded friendly licensing: bacnet.sourceforge.net
There are demos for BACnet server that run on Linux, Win32, RTOS-32, or embedded microprocessors, and some client demos of some services like ReadProperty, WriteProperty, AtomicReadFile and AtomicWriteFile.
Best Regards,
Steve
