So I have this object that I've rotated and scaled around,
then I hit freeze transform, and it changes all that stuff back
to 0,0,0 and 1,1,1 respectively?

What does that do, without referencing Maya if you can :)

Basically set rotations & transforms to 0,0,0 and scale to
1,1,1 without moving the mesh. And set the pivot to the
origin as well.
Options should be to Freeze just Xforms, or Scale or Rotate.
