Personally, I use courier-imap which has been solid and reliable for me.. Though it's my understanding that dovecot is an excellent IMAP server as well. Courier has all of my Maildir folders preceded with a '.' as well as it using it to delimit folder names (ie: '.Mailing Lists' and '.Mailing Lists.Squirrelmail Users'). I've been using Thunderbird with this configuration since Thunderbird 0.7 without difficulty.
