To add to what Laurent already said, make sure your default value is obviously something not a valid. For example, if you're property value should be a date, make the default value something like "NOVALUE". Then, you can query for the "NOVALUE" property to get a list of whatever doesn't have a value set. I think Yaron mentioned something along these lines when you asked about using a default value of "3PM". Since that might be a valid date or time value, it does not stand out from meaningful, valid data.
