"xen-unknown" refers to samples in Xen that could not be resolved using the xen image you provided. This is usually code executed from a stack trampoline that Xen uses during hypercalls. I assume you are seeing other Xen symbols in the opreport as well. If not then somethinkg is wron with your configuration.
