The UART jumpers are only required to download a new program into the
flash using the gumstix as a programmer. Once a program is loaded into
flash, the jumpers are no longer needed. The program in flash will
survive across power cycles.

You can also reprogram the robostix using a boot loader of some type.
You need to reprogram the boot loader using some type of traditional
programmer, and then you can use the bootloader to download new code
from then on (i.e. I wrote a bootloader for i2c and I have one for
serial as well).
