Hi Greg I use a gender changer (the one from gumstix.org), but cutting the cable and solder in a mini-B should work fine I think. I have thought about doing it myself, but I havent tried it yet. The RF choke is only there to prevent disturbing other equipment, no problem cutting that off. Be sure to connect the wires correctly - if you mess up, it might kill your gumstix, the camera or both!
