As far as "embedded" computing, gumstix is probably about as easy as you can get for getting started in those areas, if you're already comfortable with "desktop" linux (as in command line stuff). You basically interact with the gumstix in pretty much exactly the way you would interact with a desktop linux box (which isn't running X windows).
