The configure view dialog (View > Configure View; or it should be on the toolbar already) allows you to change it to vertical (both top to bottom and bottom to top) if that's what you prefer, though I personally find the default left -> right a good use or screen real estate. A double click on a person will make them the center person; you can use right-click > Edit to edit that person directly. If you want to directly write dates and places, that is not possible - you have to open the person editor and add events by hand. This is in part a consequence of GRAMPS design, but it provides a tremendous amount of flexibility which other programs simply don't have (at least last time I used them). Perhaps there's a Gramplet that would allow more direct editing, but I'm not aware of it. Note that this all applies for the trunk version of GRAMPS, the one to become 3.3 (release should be happening fairly soon now). If you are using GRAMPS 3.2, you might not have all the options I mentioned. You could try running a development version of GRAMPS[1], but of course, not on your real data! It has many, many options, and I suggest playing around with it to figure out what it can do and what you want. Hourglass Graph might also be useful, but I haven't really used it much. For computer use, I recommend printing to PNG with a very high DPI (to have the text clear even when you zoom in).
