You can fill the polygon with a pattern using a small image.  
For example: 
http://lyceum.massgis.state.ma.us/wiki/doku.php?id=wms:sld:polygon_example_fill_graphics&s=sld

There are also new hatching options: http://geoserver.org/display/GEOSDOC/Hatching
