Ok, can you put in a feature request? Thinking about it, you can just edit the epsg database that GeoServer uses, removing all the unwanted projections. The hard part is really the UI, both conceptually and actually implementing in our hard to code struts web stuff. Try to include as much detail as possible in how you see this working in the feature request Bart. Per layer/whole server? Select from a list of all possible, or enter the numbers of the ones you want? Alex, did you ever make progress on your web interface to add projections? Perhaps we could extend that idea to remove things as well. Or to just put some as 'ignore' in the capabilities document...
