I found a solution from the VeraCrypt subreddit that works for me. Fuse-T install, then install VeraCrypt Fuse-T version and it's working for me now
Update: Downloading Fuse-T, then downloading the Fuse-T version of VeraCrypt solved my issue and I'm able to load my drives again.
