Maybe you've got the same problem than I had. After 2 frustrating hours of trial and error (different types of archive formats, downloading the newest 7-Zip version, different hardware and OS: Win10 / 7, using the portable version), I found out, that You can't select only some files of a directory for encryption. If you choose all files of the directory it works ... Then the option "encrypt file names" appears. If you select only some files this option doesn't appear and the encryption seems to work...
