Just to follow up with what I have determined, yes indeed this script works on other Pi's for backup purposes. I copied the backup script over to another Pi and made minor cosmetic changes to remove references to RASPBX and everything worked just fine. I tested my backup by writing the backup to a new SD card, pulling the original SD card and booting up on the newly written card just fine. If you like the RASPBX backup script then I highly recommend using it for backing up any other Pi you have.
I have been using RASPBX and it's backup process quite successfully for about a year now. My setup runs a CRON job every morning at 4:30 and updates a backup I keep on the NAS and then creates a zipped copy (takes 32G down to 1G) with the timestamp as part of the zipped filename to keep as a kind of incremental (though total) backup. Just a final update to say that I resolved this by copying all the scripts I had created out to a temporary directory on my desktop machine along with the crontab entries and then restored a prior backup I had made replacing the entire RASPBX SD card. I then copied all my scripts back to the SD card and updated the crontab to what I had and everything is fine now. This restored the default email set up which is working again. The backup already had all my extensions, trunks, inbound and outbound...
