A single parity drive will allow the recovery of only one data disk, regardless of how large it is when compared to the data disks.

When running a fix command, the program should check for a previously existing fix.log file and uniquely rename it and the open a new file for writing. If a fix is interrupted for some reason and then restarted, currently the fix.log file will be overwritten. Another perhaps simpler option would be instead of writing to fix.log append to it.
How true. When the fix is running an oscillating ETA is shown. Is that in hours:minutes?

Hello, First a brief history of my use of SnapRAID. Began many years ago on an OpenMediaVault 2.0 box. Started with an array of two data disks and one parity disk, all 3TB. Shortly after the initial setup I wanted to test recovery to be sure I was happy with the program. I basically followed the online manual and the result was perfect. My use case is basically sync and scrub every three days using a script I found online and look over the emailed reports. Never got any type of unexpected result....
That isn't a complication, it is exactly what is desired, assuming you will either remove the old smaller drives or reformat them once they have been cloned. The method I have suggested is how I have been doing what you desire for the last eight years with nine drives, one by one, as I needed more space. I am on Debian Linux and use the dd program to perform the cloning.

I don't see how what you are considering is any easier than bit for bit disk cloning which prevents any complications.
You don't say anything about what OS you are using, but generally speaking this is what I do. 1) Clone the old small drives to the new large drives. 2) Expand the partitions of the new drives to make use of all the available space. 3) Expand the filesystems of the new drives to make use of the larger partitons. 4) Remove the old small drives. Done properly there is no need to do a sync or reconfigure SnapRAID.

SnapRAID does not restore file and folder metadata when performing a fix restore. All restored files and folders will have ownership of the user that ran the fix (probably root). Permissions likely to be given by whatever umask is in effect.
I can not concur. I have built up my network over many years with m0n0wall prior to t1n1wall and did not see this bug.
