Clonezilla
Well I don't know what to say. I can't get it to replicate this behavior again. I guess there was something unique about my setup that was causing this error? I thought I'd narrowed the cause down but I guess it isn't Clonezilla after all. Apologies for taking up your time.

Disconnecting all monitors breaks Clonezilla's video output.
