TL;DR - Xamarin has snapshot repos that you can use to 'pin' version of mono. Update contents of /etc/apt/sources.list.d/mono-official.list to deb http://download.mono-project.com/repo/ubuntu xenial/snapshots/5.2.0.224 main and reinstall mono-runtime.
