Which release is best for me?
'MIUI-Au Stable' is the best option for most users. It contains all the goodness of MIUI with Data2SD. If you want more performance out of your device however, you may wish to try 'MIUI-Au Data2Whatever', which will move the entire /data directory to your SD card. This can however put you at a greater risk of data loss, force closing and other problems, though it is on average a lot faster than the stable version.

How do I install MIUI-Au?
I recommend you follow this clever guide: http://www.miui-au.com/installation/

How do I update MIUI-Au?
You should be fine to just wipe your cache partition, then flash the new version (Unless release notes say otherwise)
However, if you wish to play it safe and don't mind resetting all your data, you should do a complete wipe of your phone before flashing the new version, and re install your apps manually. This is more likely to cause less issues.

What do I do with kernels, radios and RIL's?
Generally you don't need them. However if you feel that your battery life isn't as good as it should be, the first thing you should try is a new radio, and getting a RIL to match the radio. If it still isn't optimal, try a new kernel. You could fiddle around with different options, or ask on the forums what battery life other users get from using different setups.
