Is there a way to create 1 item with several "attributes" and multiple prices and get it to show them in the page?
ie, I'm doing stuff for a Watkins representative, they have Vanilla, available in 11oz and 1 Gallon, the 11oz is like 6.99 where the 1 gallon is like 69.00 I would rather display the item once with one description than have to have the same description twice for the 2 "identical" items, just because they have a different size..

No, Yams is not yet equipped to handle the case of offering multiple sizes of the same product in one description. Since each product needs its own sku adding this to Yams would require the addition of something like "product families."
