I'm guessing that you probably do not have the 'Data Source Explorer' open that will show a tree of the processes and your projects. You can open this view through Window | Show View | Data Source Explorer.
You should be able to right click on your project and subtasks to create scrum tasks, if you created a Scrum project. You should also be able to drag tasks out of the backlog in the Explorer and drag them onto other parent tasks.
