I don't like using apps in fullscreen mode as it blocks my ability to apple-tab to another application on the fly, but I would like to use my whole screen. In theory, I could set a virtual desktop to 1280x800 and cover my whole screen. Quicktime and Preview seem to use such a fullscreen mode, where get full coverage but you can still swap and get another window over you full-screen window.

Instead, the virtual desktop in Wineskin gets pushed down and right by the apple menu bar (top) and dock (left). For smaller virtual desktops, this is very good behaviour, but for a virtual desktop of the same size as the screen, this should be avoided and the virtual desktop should take up exactly the screen area.

This might possibly be related to bug 3221708..

This isn't easily fixable. Wine requires X11, which has to run on top of OSX, and thee are major issues running a windowing server on top of another one.

You CAN multitask fine in fullscreen mode. I know the normal keys won't work, thats why there is a special built in Wineskin one.

Use Cmd+Opt+A to toggle out of a locked fullscreen mode, and the same key combo will also toggle you back in that mode. It allows the multitasking you need.

There are too many issues with how X11 has to run on top of OSX that causes MAJOR issues, and focus loss and such if the display is not captured for exclusive use. Until there are some MAJOR changes in Wine, or how X11 can function on OSX, this cannot be changed.
