I would like to use Wikindx to sort docs about genealogy, including collected infos from town hall. I would therefore need to add types such as (in french) recencement, etat-civil, etc. and probably remove some as well.
How can I do that ?

It's a very difficult thing to add resource types as they require all sorts of definitions in many different files. You will find it a lot easier to make use of an existing resource type and then use custom fields to add in extra information.
Removing resource types is simple. Just edit config.php where you will find a section for this purpose.
