This is odd, but when I went to check the "Scheduled monitoring" 
settings, and chose "Save", this behavior stopped. And looking at the 
cron job now, it has the correct output re-direction.

I'm not sure what caused the behavior to change in the first place, but 
it's behaving as expected now.
