There are a couple of ways of doing this :

1) Login to Webmin, and go to Usermin Configuration -> Usermin Module
   Configuration -> Read Mail , and change the 'Default hostname for
   From: addresses' .
2) In Usermin, click on the Manage Address Book button, and add a new
   entry with the preferred from address. Make sure 'Yes, Default' is selected
   from the drop-down menu next to it.
