I have two centos 6.3 servers.
One displays what i believe is the normal set of readouts on the index page.
However the other does not display "Real Memory", "Virtual Memory" or "Processor information".
Both Kernels are the same. Linux 2.6.32-279.14.1.el6.x86_64 on x86_64
Both servers show a normal output for "cat /proc/meminfo"
On the borken server I did quite harshly try to remove all packages I could but I cannot find anywhere a list of reuired packages for the system status monitors in webmin.
How can I find out why the RAM is not displaying?
Did you remove the Running Processes module in Webmin? That is needed to show memory and processor information ..

I have "System and Server Status" and both still.
Where you can receive email alerts if services go down. Is this the one?
"System and Server Status" is the one that sends out alert emails.
There is also a "System Status" module which doesn't appear in the UI, but can still be deleted.

So on the system that is not working, did you remove ANY webmin modules?
Yes i did remove many modules.
What is the best way to return my installation to default whilst keeping my configuration?
I would recommend re-installing the Webmin package.
If you installed from the RPM, just run :
rpm -U --force http://prdownloads.sourceforge.net/webadmin/webmin-1.610-1.noarch.rpm
