I have tested Veracrypt on a remote desktop server and see when one (standard) user mounts a volume the content of that drive is visible in Explorer to all other users! This is potentially dangerous as it shows it contents to everyone during the mount. Is there a way to prevent this from happening or can Veracrypt simply not be used in a RDS environment?

Hey, welcome to the community.
Adjusting the access permissions via system policies or the used file system should do the trick like with any other storage device.
