My HDD exploded and I'm sending it to a data retrieval centre who, if possible, will transfer all the data (which includes the Windows 7 operating system) on my HDD to an external HDD. How can I access my Veracrypt partition?

I assume the data retrieval company is attempting to clone the OS drive since it appears that OS drive is encrypted with VeraCrypt and their data retrieval software cannot decrypt the VeraCrypt data.
If the clone is successful, perform the following procedures.
On another Windows computer, install the same VeraCrypt version as used on the original damaged computer and connect the external drive.
Use the Select Device button to select the OS partition of the cloned external drive.
When you are on the password screen, click the Mount Options button to enable the "Mount partition using system encryption without pre-boot authentication" option then click OK.
On the password screen, enter your password and the PIM value if you are using a custom PIM value. For the PKCS-5 PRF value, select Autodetection or select the correct hash algorithm you used when you encrypted the system partition.
Then copy the files off the mounted drive to another drive.
