I have one USB stick which is encrypted with VeraCrypt. This morning I was getting an error, "The disk you inserted was not readable by this computer", on all computers.
I have some very important data on this USB and I really have to be able to recover my files.
Im on Mac, what would be the best way to fix this?
Thank you in advance.

Good to hear, but lightning often strikes twice in the same place when important data is at stake! You should ensure you have a backup of your data, and also consider replacing the USB stick (or completely fully reformatting and re-encrypting it).
If the entire stick is encrypted, when you restore the header, you rewrite it to the same place on the stick. The most likely reason the header was corrupted in the first place is because the sectors there are starting to fail physically, and so the rewritten header is also likely to become corrupted.

Ok, I got it to work by restoring the header. Phew, that was dramatic :-)

Yeah, it was quite dramatic, but I made now a second backup, and as you mentioned, I might have to reformat the USB.
Thank you.
