I was trying to create a hidden volume on an external drive, using a 1 TB external file container. Since it takes a long time to create the outer volume, it completed that part of the process very late at night when I was not at the computer. So when the outer volume was complete, the program issued a timeout message and aborted. I'd expected to be able to get back to the computer in the morning and initiate the creation of the inner volume, but the entire process had aborted. I could not pick up where I left off -- Veracrypt would not resume where it left off, I had to start over. Is there a way to disable the timeout?

No, auto-dismount is not set. And there is no internal timer on the HDD. This is a software setting in VeraCrypt to abort on no user input within a set period of time. I've done long-term operations with other software on large files, they do not time out waiting for input. I've got a job running right now that takes 3 days on a large USB-2 drive, it is still running, has not timed out. It was that drive where I got the timeout when using VeraCrypt's Create Volume wizard.

In the VeraCrypt Settings > Preferences, do you have auto-dismount set for the timer?
Another possibility is the HDD drive has an internal timer to enter power save mode which can sometimes result in the volume being disconnected.

Does the long running three day job perform read/write operations the entire time for three days?
The power saver mode is related to no activity on the HDD.
Even Windows settings can cause a device to enter power save mode.
