On cash sales, the itembox is default blank. How can I default the itembox to a name. It would be best if the itembox is default to the product category name.

    Thanks,

It may be helpful if you can screenshot and show us what you call "itembox"

Now that explains all. You are editing the ticketline. Look at the ticketline, there is no name under the column ITEM. This tells us that you have just typed a price and added a no-name product.
The edit window copies the details from the tickeyline, in item there is nothing to copy, so this is blank.
My wild guess is that you want to achieve something completely different.
You want to show a "standard" item in the ticketline and edit price or quantity.

To do this, you should create a standard product, have it in the catalogue of products (you can have it as first item). When coming to sales screen, just click on this product, which will add it to the ticketline, quantity can be changed with the + button on the NumberPad. If you want to have this a variable price product, which means that you want to have a different price each time (may be due to weight or individually for specific customers) you can declare the product to have a variable price in the product page (stock) and you will have to punch the price in the NumberPad before adding the product from the catalogue.
You will still have the choice to edit the line as you show us in your image.

But you cannot tell someone to bring a box from room A to room B while there is no box in room A....
